Peanut Butter Banana Oatmeal Cookies!


Sometimes I will buy bananas and they will start to get soft before I have a chance to eat every last one. Instead of letting them get to dark I just pop them in the freezer for a later time. I just hate to waste!
So today I thawed one of my bananas in a zip lock bag and ran hot water over it for a bit. Didn't take too long. It will naturally mash itself so to speak in the hot water, which is nice because then you don't have to mash it.         Here is what you'll need for this tastey treat:
1 med Banana(mashed)
1/2 cup Peanut Butter
1 egg
1/2 cup of white and brown sugar each
1 cup of flour
1/2 tsp of baking soda and powder each
1/4 tsp salt 
2 tsp room temp butter
1 1/2 cups quick rolled oats

Preheat oven to 350. Then mix your flour, baking soda, baking powder, and salt in a small bowl. Next in a larger bowl beat butter with both sugars till creamy then add egg, peanut butter, and mashed banana. After this is beaten, start adding flour mixture while beating, beat until combination is smooth. After everything is added, add the oats and blend. Scoop onto cookie sheet in little dallops. They will spread so keep in mind to leave room. Bake 10-13 min or until slightly browned. Don't forget to serve with a Tall glass of ice cold milk! Yum!
You can also add chocolate chips or nuts. Nuts will make it taste like banana nut bread!

Great Breakfast for a Saturday Morning... or any morning!

I call these mini Muffin Omletts. Others may call them Fritattas. haha This has to be the simplest thing to make.


~Ingredients:
3 eggs
1/4 cup milk(your choice)
Any Omlett ingredients you love
Salt and Pepper to taste
Cooking spray

 Preheat oven to 350. Then beat the eggs and add the milk. Spray the muffin tins. Fill each muffin cup 1/2 way. then add your extras, I added cheese onions, green peppers, pre-browned sausage, and tomatoes. Salt and Pepper each one. Bake until edges are golden brown. They should pop out of the tin with no effort. I serve with a warm tortilla because I swear I'm Mexican! haha
To Make this healthier you can use no cheese, and skim milk. Use any veggie you want! You're the boss of your creation! You can also store the extras in the freezer and pop one or two out at a time in the mornings for easy hot breakfast. Cook in the Micro for about a minute and viola hot breakfast on the go! By the way I used a 6 cup tin. Double the recipe for a 12 cup

Tonight I made Taco Salad. It was simple and inexpensive! Just the way I like it! Here's what I did: Ingredients:
  Ground Turkey                          Pico Ingredients:
 Taco Seasoning                           tomato bell pepper pablano pepper
 Pico De Gallo                             cilantro onion lime juice
 Sour Cream (optiona                   salt garlic
 Cheese (optional)
 Tortilla Shells (I prefer Flour)
First, I sprayed the taco shells with some cooking spray, placed them in a pie plate and put them in the oven at 400 degrees for 10 min. Then, I started browning the turkey in a non-stick pan, and then started the pico. For the pico you want to chop everything as fine as possible, especially the onion and paplano. Then add your lime and dry ingredients to that. Combine all ingredients with a fork to get them well mixed. After all are prepared start layering your toppings! I started with the shells as my base of course! haha Next I chopped lettuce, added my meat, and then my Pico de Gallo. I also like cheese and sour cream but you don't have to add those if you are lactose intolerant or you just do not want the dairy!
